The French Polynesian Islands reminded me of my parents home (and my home of course) St. Lucia. The beaches, the beauty, the laid back feeling and of course the Breadfruit. All the beautiful Breadfruit trees in these lush islands made me constantly hungry to set up my pot and start cooking it along with a Red Snapper (if you know you know). The Breadfruit originated in New Guinea and the Indo-Malay region. An expedition was started by the colonizers and this tasty dish was spread from Tahiti to the Caribbean islands.
